This past week was my spring break and I jumped right into the baking. I made a chocolate chip cookie cake which I brought to work for the St. Patricks Day potluck as well as some carrot cake cupcakes! The cake was delightful and many people at work enjoyed it. The cupcakes were AMAZING!! I have worked so hard to make the perfect recipe that has all the perfect things. This batch in particular was special because it was for my Pop-Pop's 70th birthday party! I had carrot cake cupcakes filled and iced with a vegan cinnamon cream cheese frosting. Here is a video of me filling the cupcake liners with my batter and a photo of the finished cupcakes.
